Sunday Salad

Hello friends....yes I am still here....I've been trying to get my craft room in order but seem to get sidetracked
by other things. I spent most of yesterday and today clipping and organizing my coupons. Today's savings were outstanding. I saved $214.60 and spent out of pocket $44.15.  Love couponing!!
The Publix Family Style magazine has this yummy
Chickpea Salad which I made today for lunch.
It it soooo's light and very healthy. Lots of
fiber and protein!!

Chickpea Salad

2   15 oz. cans of no-salt added garbanzo beans, rinsed and drained. (I peeled the skin off)
6 Roma tomatoes, sliced
4 ounces crumbled feta cheese
1/4 cup lightly packed sliced basil or mint leaves (I used basil)
1/3 cup white vinegar
1/4 cup olive oil
1 tsp sugar
1/2 tsp ground black pepper

In a large bowl combine beans, tomatoes, feta cheese and basil. In a screw up jar combine vinegar, oil, sugar and ground black pepper, shake to combine. Pour over salad mixture.
15 minutes to make.

That is very impressive..better in your pocket than the markets..
I should really cut coupon..but with shopping for just two sometimes even coupons would cost me the same..
